Ok so I can hardly contain my excitement for the Super Bowl tonight, and I decided that a special weekend like this deserves a double post!
Mr. Vittles and I had an appetizer similar to this at a restaurant recently, and I thought I might be able to replicate it at home.
Well, all I can say is - sorry if you had any health-related New Years resolutions, because I'm pretty sure you will not be able to keep them with these puppies around.
The dipping sauce really takes things to the next level. But if you don't like spicy dips, start with just a tiny bit of cayenne (or none) and adjust from there.
Also, feel free to use more cheese and/or bacon to your taste. Never hurt anyone except their pants size.
Now... LET'S GO BIG BLUE!
Cheesy Bacon Oven Chips
- 1 large, uniformly-shaped russet potato, scrubbed well and sliced into 1/8" rounds*
- cooking spray
- 3/4 C. shredded colby jack or cheddar cheese
- salt & pepper to taste
- 2 T. crumbled bacon (about 2 slices) - I used real bacon bits
- chopped parsley or chives, for garnish (optional)
Preheat oven to 375 degrees. Bring sliced potatoes to a boil in cold, salted water to cover for 5 minutes. Carefully drain, and transfer slices to a paper-towel lined countertop or cutting board. Pat to dry.
Grease a baking sheet with cooking spray, and lay out potato slices so they are overlapping on it. Spray lightly with additional cooking spray, then sprinkle with salt & pepper to taste. Sprinkle evenly with shredded cheese & bacon. Bake 12-14 minutes in preheated oven until cheese is melted & bubbly. Serve with chipotle ranch sauce (recipe below). Serves 2.
*You can use 2 medium-sized potatoes rather than 1 large. Also, I like to leave the skin on but you can peel the potatoes if you prefer.
Chipotle Ranch Dipping Sauce
- 1 T. ranch dressing
- 3 T. sour cream
- 1/4 t. chipotle chili powder
- 1/8 t. cayenne (adjust more or less depending on how spicy you want).
- 1/8 t. salt
- 1/8 t. garlic powder
Place all ingredients in a small bowl, and stir to combine. Refrigerate any leftovers.

DeleteJust made these and they are delicious!! I don't eat pork, so I skipped the bacon, but still great! And I had trouble finding some of the ingredients for the dip, so I used ranch, sour cream, crushed red pepper, emeril's essence, and texas pete. Was a great addition to the potatoes!!

ReplyDeleteAbout how long do you boil the potatoes for? Until they are soft on inside or less than that?
ReplyDeleteHi Porscha! You will boil them only about 5 minutes. Not until they are soft, though, they will soften more in the oven.
DeleteFor some reason I have to only boil like 3-4 minutes (depending on how strong the boil is)...mine seem to get too soft too quickly and break when I pour them in a colander to drain and then when I try to place them on a paper towel to drain. (plus they majorly stick together!
DeleteI had that problem to I boiled 5 min it was way too long they were throughly cooked and breaking apart. I still baked and they still tasted great just had to eat with a fork more like a scalloped potato dish. But I will make again and just take a few minutes off boiling. Delicious recipe!
DeleteI made these this weekend and OMG they were so good. I made with 2 large potatoes and it took about 5 minutes for 4 of us to devour the cookie sheet full of them!!! I love your Chipotle Ranch sauce, it definitely made these Potato Skin Chips.

DeleteThese look so delicious! I am planning to make it for a big group which means I'm going to quadruple everything lol. If I spread 4 batches of this over 2 baking sheets and put both in the oven side by side, would I have to adjust the baking time?
ReplyDeleteThat sounds awesome! I would say just rotate the sheets halfway through baking (switch the one on the top rack with the one on bottom rack). That way they should cook pretty evenly. Hope your guests enjoy! :)

DeleteThese look yummy. I wanted to suggest a couple of shortcuts. When I need to precook potatoes, I do it in the microwave. Slice the potatoes, put them in a glass Pyrex bowl, then microwave on high for 2 minutes. This should cook them enough for the recipe, plus it eliminates the extra step of patting them dry.
ReplyDeleteAlso, I recently bought a Taco Bell sauce that is probably similar to this dipping sauce. It's Taco Bell Bold & Creamy Chipotle Sauce. There is also a Taco Bell Spicy Ranchero sauce that should be good with these. These are in the taco shell section at the grocery store, near the salsa.

ReplyDeletejust made these for my dinner. cut about 1/4" thick and boiled a couple of min. longer. after 12 min. in the oven, added a dollop of sour cream and cooked about 5 min. longer. covered with fresh chives from a pot I grow year-round - luckily I live in zone 9. I also fry up bacon and keep it in the freezer to use in recipes like this - just never could get used to even "real" bacon bits. thanks for the recipe which I found on Pinterest.

ReplyDeleteHi! I wouldn't say you did anything wrong, mine actually weren't that crispy either... But if you wanted them to be, you could try leaving them in the oven an extra couple minutes. Just keep an eye on them to make sure the toppings don't start burning. (If you want them to stay in the oven even longer than that, I'd suggest laying out the potatoes on the sheet and spraying them but baking them bare for a little while first to give them a chance to crisp up - THEN add the toppings, & bake more until cheese is melted). Hope this helps!

DeleteI have made these several times and they are soooo good!! I have never boiled my potato slices, however. They are thin enough that they bake up just fine.
